Cheese pastry puff with blueberries and strawberries

Ingredients
Fresh Blueberries
Fresh strawberries, stems removed and cut in half
1 tablespoon sour cream
3 tablespoons granulated sugar
2 tablespoons lime juice, freshly squeezed or bottled
Lime zest from one whole lime
2–1/2 teaspoons vanilla extract
3 tablespoons melted butter, for brushing
Sanding sugar
1-2 sheets frozen puff pastry thawed
Directions
  1. Preheat oven to 400 F.
  2. On a lightly floured surface, unfold the thawed puff pastry. Using a 4.5 biscuit cutter cut out four rounds. 
  3. With a smaller cutter or drinking glass, cut out smaller rounds inside those rounds to score the dough. 
  4. Transfer the rounds to a parchment paper lined baking sheet. Repeat the above steps with the scrap pastry dough. 
  5. In a bowl, combine the cream cheese, sour cream, granulated sugar, lime juice, vanilla extract and lime zest. Mix until smooth and creamy. 
  6. Place two tablespoons of the mixture in the center of each puff pastry circle and spread, leaving a 1/4 inch rim. 
  7. Arrange your blueberries and strawberries on top. 
  8. Bake for 15 minutes. 
  9. Allow pastry to cool down to room temperature before enjoying.
